Gyoza: How Japan Rebuilt the Dumpling

Gyoza is jiaozi rebuilt — thinner skin, more garlic, and a three-phase cooking sequence that rewards precision. Here is the yaki technique in full, with ingredient and equipment notes for sourcing in Europe.

Gyoza is jiaozi rebuilt by Japan into a crispier, garlickier, more reproducible object — and the yaki technique that defines it is a precise sequence you can learn in an afternoon.

Regional context

The word gyoza (餃子) is the Japanese reading of the same characters used for jiaozi in Chinese. The dish entered Japan through contact with Manchuria in the 1930s and 1940s — specifically through Japanese soldiers and settlers who encountered the dumpling in northeastern China and carried the form back. According to The Cambridge World History of Food (Kiple and Ornelas, eds., 2000), the postwar street-stall economy was the primary vector by which gyoza entered the Japanese domestic kitchen. Utsunomiya, in Tochigi prefecture, claims the highest per-capita gyoza consumption in Japan and hosts a gyoza museum; the city’s association with the dish dates to returning soldiers from Manchuria settling there postwar.

The divergence from jiaozi is real and systematic, not incidental. Japanese gyoza standardised around three differences: a thinner wrapper (1–1.5mm versus the 2–3mm of boiled jiaozi), a filling with a higher garlic ratio and more cabbage relative to meat, and a single canonical cooking method — yaki, meaning pan-fried with a steam-finish — rather than the three discrete methods (boil, steam, pan-fry) that Chinese jiaozi uses. These are not stylistic preferences; they are engineering decisions that produce a different object with different performance characteristics.

What makes gyoza distinct

Wrapper. Gyoza wrappers are thin and designed to crisp without toughening. Standard commercial wrappers (Japanese brands, or Chinese-market equivalents labelled gyoza-size) are approximately 9–10cm diameter and 1–1.5mm thick — noticeably thinner than their Chinese counterparts. For home-made wrappers, hot water is the critical variable: cold-water dough produces a chewier, more resistant wrapper that resists the thin rolling the yaki technique requires.

Fill. Standard gyoza filling is roughly 60% napa cabbage and 40% fatty pork mince by weight, with garlic, ginger, sesame oil, and soy. The garlic ratio is higher than in most Chinese dumplings — two to three cloves per 250g of pork is the standard, where Chinese versions might use one or none. This is a genuine stylistic divergence. The cabbage must be salted and squeezed before use; unsqueezed cabbage retains enough water to prevent the base from crisping during the yaki step.

Cook method. Yaki gyoza uses a three-phase sequence: sear dry, then steam under a lid, then crisp again with the lid off. The sequence is precise and the phases cannot be reordered. The result is a dumpling with a deeply crisped flat base and a tender, yielding top — two textures in one piece.

Serve. Gyoza in Japan is typically served as a main course, not a dim sum snack. The tare is simple: rice vinegar and soy, two to one. The acidity is structural — it cuts the pork fat in the filling.

Identifying marker. A gyoza has a flat base and pleats only on one face. If you see pleats all the way around the seam, you are looking at jiaozi. The flat back is not decorative; it is the surface that produces the crust.

Step-by-step guide

The following steps produce approximately 30 gyoza (serves 3–4). All quantities in metric; imperial equivalents: 200g ≈ 7oz, 250g ≈ 9oz, 300g ≈ 10.5oz.

  1. Make hot-water dough. Combine 200g plain flour with a pinch of salt. Pour in 90–95ml just-boiled water. Mix to a shaggy mass, then knead 8 minutes until smooth and elastic.
  2. Rest the dough. Cover with a damp cloth and rest at room temperature for 30 minutes.
  3. Salt and squeeze the cabbage. Finely shred 300g napa cabbage. Toss with 1 tsp salt, rest 15 minutes, then wring hard in a clean cloth until the volume roughly halves.
  4. Mix the filling. Combine squeezed cabbage, 250g fatty pork mince, 2–3 crushed garlic cloves, 1 tsp grated fresh ginger, 1 tbsp soy sauce, and 1 tsp sesame oil. Mix until slightly tacky.
  5. Roll wrappers. Divide rested dough into 30 pieces (~10g each). Roll each thin: 1–1.5mm, ~9–10cm diameter. Keep covered while working.
  6. Fold. Place 1 rounded tsp filling in the centre, leaving a 1.5cm border. Wet half the border. Fold the flat side up and pleat 3–5 times on the top face only. Press the base flat.
  7. Sear dry. Heat a flat-bottomed pan over medium-high. Add 1 tbsp neutral oil. Place gyoza flat-base-down, not touching. Cook undisturbed 90 seconds to 2 minutes until bases are deep gold.
  8. Steam. Add 60–70ml water or unsalted chicken stock. Cover with a tight-fitting lid. Steam 4–5 minutes until wrappers are translucent and filling is cooked through.
  9. Crisp. Remove lid. Let all water evaporate. Add a few drops of sesame oil around the pan edge. Cook 60–90 seconds until bases re-crisp and lift cleanly.
  10. Rest and serve. Rest 1 minute. Serve with 2 parts rice vinegar to 1 part soy sauce as tare.

Crispy skirt variant (hanetsuki gyoza). Some Japanese restaurants serve gyoza with a lacy, connected skirt (hane). Instead of water, add a slurry of 1 tsp plain flour, 1 tsp potato starch, and 100ml water before the steam step. As it dries, it forms a thin crisp sheet connecting all dumplings. Flip the whole sheet out of the pan upside-down — lace faces up. Requires non-stick and slightly more oil.

Ingredient sourcing

Five ingredients where quality or sourcing matters:

Napa cabbage (hakusai). Central European supermarkets stock napa cabbage year-round, though quality varies. Look for tight, pale-green heads with no browning at the base. Pork mince. Use shoulder, not loin. Loin mince is too lean — the filling will be dry and grainy. German butchers will mince shoulder on request (Schweineschulter, bitte durch den Wolf). Sesame oil. Used in the filling and as a finishing drizzle. Use roasted (dark) sesame oil, not light/cold-pressed. Store-bought wrappers. If making wrappers from scratch is not the goal, Japanese-brand gyoza wrappers (standardised at ~9–10cm) are stocked at most Asian grocery stores. Chinese jiaozi wrappers are thicker and produce a chewier result, but work if gyoza-specific wrappers are unavailable.

Equipment

Flat-bottomed pan with tight-fitting lid. The single most important piece of equipment. A wok does not work — the curved base means only the centre contacts the heat surface. If you can execute yaki gyoza consistently — gold base, cooked-through filling, no sticking — the technique transfers directly to Korean mandu pan-fried, Chinese guotie, and anything else that uses the sear-steam-crisp sequence. The gyoza is a good starting point precisely because the visual cues are unambiguous: gold is ready, pale is not, and the lid tells you exactly when the steam phase is done.
